Spanakopita

I was looking for something a bit more light to make as lunch for Easter, so I came across this recipe and I liked it. I had some extra spinach and feta, so why not.


This is the first time I made a Spanakopita, and technically, it is not very much like the recipe I found online. It came out more like a spinach quiche, so I do apologize to any Greeks out there.


The recipe should be made with filo pastry, which I couldn't find so I used puff pastry. And I had some extra mushrooms which I added to the mix. Otherwise, I followed the recipe to the letter. Again, mostly. I used fresh spinach rather than frozen spinach.
