Braised Jack Chilli

It is a typical day in the UK. Grey, cold and rainy. Very much like most of the winter in the UK. And what could be better on such a gloomy day than a warming chilli?


This recipe is from the BOSH! Healthy Vegan book, it is quick and even gives calories count. I don't count calories, and I don't believe in calory counting, as it depends on so many things of how many calories you should have in a day, but I can say it is low in fat, low sugar, full of fibre and protein-packed.


I have written the recipe down as it is in the book but I have tweaked it a bit as well, depending on what I have in the fridge or in my cupboard. Like adding chickpeas or mushrooms as I had no peppers or celery. Adding more spices to the mix like turmeric (natural anti-inflammatory and antioxidant) or smoked paprika as it gives the chilli a nice smoky flavour.


It is done quickly and tastes amazing. Usually, when I make it, the man has second helpings and it doesn't last more than two days. If you can't find jackfruit you can also use king oyster mushrooms, and rip the stems up and just use them as you would the jackfruit.


So here is the recipe.

I did not use fresh chillies, as I never have any in stock, so I used dried crushed chilli. It can still give a lot of heat by using dried chilli flakes. Enjoy!
