Creamy polenta with foil baked salmon

This recipe is my own creation. Sometimes, when I am pressed for time and do not have a lot of ingredients, I just search the fridge or freezer and my cupboards for something that I might enjoy eating and then create a suitable recipe out of it.


I like to use fresh herbs from the garden for this recipe and mix it up. The fresh herbs give a nicer and stronger flavour to the dish. Also, sometimes, I add some white wine to the mushroom mix, as it gives it an interesting zing.

I could say it is in a way a typical Romanian dish. Romanians love to eat fish, but they also love polenta. Polenta is a staple of Romanian cuisine. It can be enjoyed by itself, or by adding some crumbled Romanian cheese to it (telemea), single cream, or as a side dish for fish and other meats.
