Romanians like their salty sticks or as we call them "saratele". Actually, I should really say we love salty sticks. We do not need a special occasion to bake salty sticks. We just need to have the ingredients ready and set baking.
They take a while to make but don't last very long. You can make 100 pieces of the and they are gone in two days. Yes, it is a bit frustrating when you slave away and you think that it will last for at least 4 days and by day 2 there are just crumbs left.
My former mother-in-law used to make some really nice salty sticks. She did give me the recipe but I have no idea what I have done with it. Whenever I move I seem to lose something or other. So this recipe is one I found online, by Jamila. She is very popular among Romanians living abroad and at home.
To make these particular salty sticks, you need a typical Romanian cheese called "telemea". It's a type of cheese traditionally made out of sheep's milk and similar to the Greek feta cheese. Now I have found this cheese, "telemea" at a Romanian shop in Mansfield, but as I live too far away now from Mansfield and as at the time of writing we are on lockdown due to Covid-19, I use whatever type of cheese I find. So I used quark from Lidl and added an extra teaspoon of salt. If you use "telemea" which is a very salty cheese you do not need to add any extra salt or it would be too much.
I like to use sesame seeds on top but they are very nice with poppy seeds or caraway seeds as well.
