I have only been a pescatarian for about 15 years, but even during the times, I ate meat I have never tried foie gras.
My dad used to make pate out of chicken liver, our chickens I might add, and yes I used to eat it, but I wasn't really a fan. Perhaps because I really didn't like liver. Or I just really didn't like the taste. To me, it didn't taste of much.
Now what I really love are mushrooms. Yes, I do believe I am a hobbit. Although, I do not like pipe smoking as much. But I digress. I was looking for a suitable mushroom pate, that would taste nice and have a nice texture. I found a blog post, I think of a Frenchman on faux gras. I made it and liked it very much.
Recently, about perhaps a year ago, I discovered two friends who have gone vegan and have launched a recipe book and channel called BOSH! I was hooked. So, for Easter, I received one of their books and for Christmas their second one. In their second book, I believe was a different take on the faux gras that I had found online a while ago.
I made it and it was an instant hit. Especially with my housemate. Let's put it this way, I sometimes make it more for him then for me. It yields a very big pot size so I tend to freeze some, but usually, within a day or let's say two I need to defrost it as there is usually nothing left. And he always wants more.
So without further ado, the following recipe is found in the BISH BASH BOSH! book. I sometimes do not add the beetroot to the recipe mainly because I can't find one at times, so I just leave it out. I also do not bother with the butter on top, as it just doesn't last long in our house and my housemate likes it without.
Lastly, the cognac I use is Courvoisier because it is the only one I found on the shelves. Just don't tell my aunt. She loves the stuff and would probably be absolutely appaled at the fact that I use it in pate!
I hope you guys enjoy the recipe and you try it out. It really tastes amazing. I usually slap it on toasted bread and my housemate on crackers.
I know it doesn't look like much without the garnishing, but trust me it tastes amazing. Even meat-eaters would be surprised. Enjoy!
