Cremeschnitte

Cremeschnitte is a very popular cake in Eastern Europe. It does tend to come in various shapes and sizes, but the one I enjoy most is the recipe I will share below.


My mom used to make this cake often. She also used to make the puff pastry used for the recipe, which I remember used to be very difficult. Once the sheets became available to buy she started buying them and although I also make most things from scratch, puff pastry and filo pastry I do tend to buy.


Although my mom used to make a multitude of cakes and sweets, for whatever reason, after my mom's passing, both my brother and I started indulging in cremeschnitte as a way of remembering her.


A few weeks ago, I gave making this slice a try. Easy to make, if you buy the pastry, but you do have to wait until the next day to indulge. For my UK friends, the pudding used is by Dr Oetker and you can find them for sale on Amazon or at any Polish shop, providing they are open for business during Covid.

I would also advise when baking the pastry to put some baking beans on top, otherwise, it will become a bit too puffy. Do not worry when cutting the slice that a lot of the cream will splash out, it does tend to happen.
